Barbecued Pork Ribs |

While on a visit to our daughter and her family in Colorado, she prepared BBQ ribs for us so that we could taste her version of this dish. Martine told us, she had tried and changed different recipes for the BBQ sauce, until she came up with this easy, but very tasting sauce. We all loved it! Not just on ribs does this sauce taste good, try it on some BBQ chicken, or pork chops, she says. Thank you Martine. |

Put ribs, salt, pepper,
garlic, bay leaf and onion into a stockpot. *(See note for Pressure Cooker
method). Cover with water and bring to boil. Simmer for about 30 minutes
depending on the amount of ribs. Cool stock and save for other uses. While
ribs are cooking, prepare sauce. In the meantime, combine all sauce ingredients into saucepan and bring to boil while stirring until thickened. Taste to adjust tanginess, salt or sugar. Remove ribs from stockpot and put in a deep bowl. Brush 1/2 sauce over spare ribs to marinate for at least 3+ hours. (Longer is even better) Cover with plastic wrap and refrigerate. Then, bake in 400°F (200°C) oven for 20 minutes until heated through and nicely browned. Or BBQ for 15 - 20 min., while brushing more sauce on ribs. Do not turn the ribs on the barbecue. Heat the remainder of the sauce and serve with the ribs. Keep plenty of napkins on hand. * Pressure Cooker method: Let ribs simmer under pressure in Pressure Cooker for 15-20 min. Cool the pan off under cold, running water and remove ribs from stock.
